One of my earliest memories as a child was helping my Mum baking cakes,
especially the cleaning out the bowl part, she was a very good cook and it seems to have
rubbed off on me. I love preparing food and
and of course enjoy eating too.
I’m fortunate to live in an area where wonderful fresh and organic food is
easy to come by, and live on an olive farm with my partner Trevor where we produce our
own organic olives and olive oil. The food I enjoy most is simple and fresh with an overall Mediterranean influence. lots of fresh herbs to add flavour and loads of salad.
I use as much fresh organic and local produce as I can find....fruit, veg. fresh eggs, local goats and
sheep’s´ cheeses, nuts and seeds, herbs, fish and free-range chicken, supplemented with
organic grains such as quinoa, millet and basmati rice. And of course my own olive oil!And at the
end of the week I try to let everyone have a copy of the recipes I’ve used that week
so they can try them out at home and keep on eating healthily.....
